Mesh grades
A coarse-to-fine GRADIENT of straining fineness — how fine the holes/mesh are, which sets what passes through (construction-named at the coarse end, fineness-named at the fine end): perforated (punched holes, the coarsest colander grade — drains pasta water), wire-mesh (an open metal grid, a coarse basket strainer), fine-mesh (a flour sieve/sifter — sifts flour, retains lumps), micro-mesh (the finest mesh — a superfine sieve/chinois, passes liquid and the finest particles, retains the rest). A growing vocabulary (L13).
